Lemon Meadow marks the fourth release in the experimental Huntress series, a range dedicated to pushing the boundaries of fermentation. For this whisky, the distillery employed a yeast strain typically reserved for French sparkling wine—rarely seen in Scotch whisky production. The result is a vibrant spirit that highlights flavors of lemon sorbet, chamomile, and buttery shortbread.
First trialed in 2017, the distillery’s inaugural year of production, this yeast experiment set the stage for the creative approach behind Lemon Meadow. Matured in the house style casks, the whisky carries a creamy texture with delicate floral notes, offering a fresh and distinctive take on modern Scotch making.
