Description
Larry Cherubino Laissez Fiano 2022 is a sophisticated expression of the Fiano grape, crafted from select vineyards in Western Australia’s cool-climate regions. The vines thrive in gravelly loam soils over clay, which contribute to the wine’s distinctive minerality and layered complexity. Carefully hand-harvested at optimum ripeness, the grapes are gently pressed and fermented in small stainless steel tanks to preserve purity and aromatics, with a portion matured on fine lees to enhance texture and depth. The result is a beautifully balanced, vibrant white wine that captures both varietal precision and regional character.
Meet the Producer
Established by acclaimed winemaker Larry Cherubino, the Cherubino Wines estate has earned international recognition for its meticulously crafted, site-expressive wines. With a focus on minimal intervention and sustainable viticulture, the winery produces elegant, terroir-driven wines that reflect the best of Western Australia’s Great Southern and Margaret River regions.
Production
Grapes are hand-picked in the cool early morning to retain freshness and aromatic intensity. After gentle pressing, the juice is fermented in temperature-controlled stainless steel tanks, with a small portion aged on fine lees for several months. This approach preserves the Fiano’s natural vibrancy while adding a creamy texture and savoury nuance.
Tasting Notes
Pale straw in colour with green highlights, the nose bursts with aromas of pear, citrus blossom, and lemon zest, layered with hints of almond and wet stone. The palate is crisp yet textural, showing flavours of ripe pear, grapefruit, and subtle honeyed tones, balanced by a saline minerality and a long, elegant finish.
