In Chablis, the grape used is Chardonnay. Chablis is the northernmost Appellationd’origine Controlee of the Burgundy region. This region is known for its unique soil typecalled Kimmeridgian. This soil type produces wines of austerity, minerality, and finesse,and is often described as having a “flinty” note. Julien Brocard Chablis Boissonneuse ismade from biodynamically grown grapes and aged for 10 months in large oak foudres.Aromas of honey, citrus peel, and white peach lend to lime zest, green pepper andcandied orange on the palate. Medium body with gorgeous minerality and a slightsalinity that finishes with a linear acidity that cleanses the palate. This wine will bepaired perfectly with pretty much everything in your traditional Thanksgiving dinner.
